Inspired by the resourceful practices of traditional monasteries, where ingredients were valued, preserved, and used with purpose, we have built a dining experience that respects both the product and the people behind it. Our philosophy centres around seasonal ingredients, local sourcing, whole-animal butchery, and thoughtful cooking methods that minimise waste while maximising flavour.
By working closely with Maltese farmers, producers, and suppliers, we create menus that celebrate what is available locally and responsibly throughout the year.

Local & Seasonal Sourcing. Prioritising ingredients grown and produced in Malta whenever possible.
Nose-to-Tail Cooking. Utilising every edible part of the animal to reduce waste and honour the product.
Food Waste Monitoring. Measuring and analysing waste after every service to continuously improve preparation, portioning, and storage practices.
Preservation Techniques. Extending the life of seasonal ingredients through fermentation, pickling, curing, and other traditional methods.
Responsible Operations. Making conscious decisions throughout our kitchen and restaurant to reduce our environmental impact.
