Available from Friday dinner to Sunday dinner, this limited-time sharing menu showcases one of Malta's most prized seasonal ingredients through a curated selection of six small bites, each highlighting a different cut, texture and preparation.

Cornflake-crusted tuna morsels, spiced aioli.
SAFFRON & ‘PEKORIN’ RISOTTO
Saffron, local pecorino cheese, aged risotto, confit tomatoes, yellow tuna belly.

Lean Back Loin cooked over glowing wood embers, preserved lemons, fermented kale, olives & capers.
